Description

Decaf Brazil Cerrado Royal Select uses a water process to remove the caffeine. The Mexican Water Process is a chemical-free method for removing the caffeine from green coffee beans. The process involves charging water with a coffee extract that includes all of the dissolvable solids of green coffee, minus the caffeine. This is done by soaking a batch of green coffee until the dissolvable solids are extracted. The coffee is discarded while the water is passed through a carbon filter that removes the caffeine, creating the coffee extract. A new batch of green coffee is then soaked in this extract. The caffeine is drawn out of the coffee leaving the other dissolvable solids (flavor compounds) in the bean. Finally the extract is passed through the carbon filters again to remove the caffeine and the process begins again.

Cerrado is a region in the state of Minas Gerais, the largest coffee-producing state in Brazil. Coffee has been a major crop in this
region since the 1980’s mainly because of the devastating black frost of 1975 that forced growers from the Parana region to
relocate north to Cerrado and other areas of Minas Gerais. Today, coffee is produced by over 4,500 growers on 175,000 hectares
of farmland with yields of approximately 5.5 to 6.0 million bags per year. The coffee is grown in rich soil that the natives call
“Terra Roxa” or “Red Earth” and other factors such as consistent rains, high daytime temperatures, and dry winters combine to
make the Cerrado region ideal for producing coffee.
