Description

The Irish love to drink and drink all day long (tea, that is). But while they may be known for some of the finest beers and whiskies in the world, they actually drink more black tea than almost any other country. So it is safe to say the Irish really know their stuff. That is why we wanted to make this tea as delicious and as complex as their spirits. Big, bold, and malty. A tea strong enough to handle whole milk and sugar, yet refined enough to have subtle notes of fruit, roasted nuts, and honey. This black tea is great to drink all day long and not just in the morning.

Like most authentic Irish Breakfast teas, ours is 100% Assam. In fact, we chose two of the most esteemed tea farms in the region. The first is the small, family run Tonganagaon Tea Estate, which is found in the Eastern Assam Valley right next to the Namdapha National Reserve. The natural biodiversity of the reserve helps to create rich soil that gives this tea its smooth, malty flavor with notes of ripe cherries and dark prunes.
The next tea we used was from the Dooars region, which is located in the floodplains of the Eastern Himalaya Mountains. This farm sits on a narrow strip of land that joins the Assam and Darjeeling tea growing areas next to the Sankosh River. The result is a briskness similar to a Darjeeling tea, yet the malty notes with hints of hazelnut and honey.
Preparation
1) Bring fresh, filtered water to a boil
2) Pour over your tea leaves in a teapot
(1 spoonful of tea per serving)
3) Steep 4 minutes
4) Stir, strain, and enjoy!
